PREAUREUM BLACK GARLIC
Black garlic has been consumed for hundreds of years in Asia. Black garlic is fresh garlic that has gone through a fermentation process over a certain period of time under a strictly controlled high temperature, humidity and air conditions.
The fermentation process, also referred as the thermal process converts y-glutamyl cysteine to S-allyl cysteine (SAC), which is the primary source for a wide range of health benefits received from black garlic, such as antidiabetic, antioxidant, anti-inflammatory and other benefits. Some amino acids contained in fresh garlic have been enhanced 40-100 folds when compared to those in fresh garlic thanks to the fermentation process.
The fermentation process decomposes the unpalatable smell found from fresh garlic caused by allicin, turns the white garlic to the distinctive black color via a natural caramelisation process which also creates the soft texture, sweet flavour of the black garlic.
