Ottolenghi's rhubarb & strawberry crumble cake with turmeric powder


The recipe is given to us by our beloved blogger Manu Munson. She added her creativity to the original recipe by adding our premium turmeric powder. What a way to enjoy your sweet while having the health benefits of turmeric!

Turmeric cake with ingredients straight from garden


Ingredients

Serves: 12


CRUMBLE

120g unsalted butter, melted

150g soft light brown sugar (less sugar is ok too, we don't like it too sweet, do we?)

190g plain flour

30g desiccated coconut

1/4 tsp salt

FRUIT

250g rhubarb (2 or 3 medium sticks) cut into 1cm slices

250g strawberries, hulled and sliced 0.5cm thick

25g soft light brown sugar

30g tapioca flour (or cornflour)

2 tsp lemon juice

scraped seeds of 1/2 vanilla pod

1/8 tsp salt


More fruits as you like!


CAKE

185g plain flour

3/4 tsp baking powder

1/4 tsp salt

160g unsalted butter at room temperature, cubed

220g icing sugar (you can reduce the sugar as you want)

3 large eggs

1 tsp vanilla extract½ cup (1 stick) unsalted butter, room temperature


and don't forget our premium turmeric powder! 2 teaspoons are good enough!
